Because your cells have a constant need for fuel, the body maintains energy reserves. Glucose, the body’s primary source of energy, is stored in the liver and muscles in the form of glycogen. When more fuel is required than the available blood sugar can provide, enzymes break down the glycogen and release a surge of energy-giving glucose. Glycogen is categorized as a complex carbohydrate — a polysaccharide composed of many simple sugars linked together — but is synthesized in the body rather than being derived from the diet. Small amounts of dietary glycogen are available in animal meats.
